- 2 tablespoons butter
- 1 diced onion
- 1 finely chopped garlic clove
- 2 cups basmati rice
- 1 tin coconut milk
- 2 cups vegetable stock
In a pot, heat the butter over medium heat and add the onions and cook until tender.
Add the rice to the pot and stir until coated with butter and onions. Add the garlic and spices and stir until fragrant.
Stir in the coconut milk and stock and bring to a boil. Allow to boil for 5 minutes.
Reduce the heat to low, cover the pot with a lid and cook the rice for 15 minutes.
Fluff the rice and serve alongside a curry or stew.
