- 500g chicken pieces
- 2 Tbsp Mozambican peri peri spice
- 3 finely chopped garlic cloves
- ½ chopped onion
- 3 tablespoons olive oil
- ½ c coconut milk
- Lemon juice – 2 medium-size lemons, squeezed
Prepare the marinade by mixing the peri peri spice, garlic, onion, olive oil, coconut milk and lemon juice in a bowl.
Drench the chicken either in a bowl that can be sealed or in Ziplock bags and refrigerate for 2 hours or overnight.
Remove the chicken from the bag and remove excess marinade and grill on medium-high heat for approximately 15 minutes or until the chicken is cooked through.
If cooking the chicken in the oven, arrange the chicken on a single layer or a baking pan and cook for approximately 50 minutes, rotating half way at about 20 minutes.
In a saucepan, add the remaining peri peri marinate and cook for about 7 minutes. Serve the sauce with the grilled chicken.
