- 500g chicken pieces
- 1 Chopped Onion
- Tablespoon Kenyan Kuku Paka spice
- grated fresh ginger
- 2 finely chopped garlic cloves
- 2 tablespoons oil
- 1 tin chopped tomato
- 1 tin coconut milk
- Garnish: chopped cilantro
Add the onion, ginger and garlic to a blender and process until smooth. Add a little water if necessary.
In a large pot, add the oil over a medium heat. Add the onion puree and spices and cook for approximately 5 minutes, stirring frequently.
Add the tomatoes and simmer for a further 4 minutes.
Reduce to a medium heat and add the chicken and coconut milk and cook until the chicken is cooked, between 30 minutes to 1 hour.
Add the chopped cilantro and serve with rice.
